Ingredients for 2 people
- 40 g glass noodles
- 7 pieces of dry shrimps
- 1 red chili
- 10 cherry tomatoes, cut in half
- 1/2 onion, thinly sliced
- 1-2 stalks of Chinese celery
- 8 tiger shrimps
- roasted peanuts (to garnish)
for the dressing
- 2 Tsp fish sauce
- 2.5 Tsp lime juice
- 2 tsp sugar whisk all ingredients together till completely dissolved.
soak the glass noodles into room temperature water for about 15-20 minutes, or till soft and clear.
soak the dry shrimps into room temperature water for about 10 minutes. pound them in a terra-cotta mortar together with the chili until completely shredded and put it in a separate bowl.
cut the celery (stalk + leaves) lengthwise and then into about 3 cm pieces and add them into the bowl together with your onions and tomatoes.
blanche shrimps in a frying pan for a couple of minutes and add the into the bowl.
cook noodles into boiling water for about 1-2 minutes.
put the noodles on the vegetables and shrimps, then pour the dressing on top. give it a good stir and leave the noodles to rest for about 10 minutes.
serve with some crashed roasted peanuts.
